Club sandwich with ham

Brocéliande Well Bred ham - 4 slices
White bread (with or without crusts, soft or toasted, all variations work) - 12 slices
Softened butter - 50g
Gherkins - 50g
Mustard - 20g
Plump tomatoes - 1 or 2
Leaves of roquette (for the photograph we used kale, which was good!) - Several

  • Start by chopping the gherkins in the mincer or very finely with a knife.
  • Add the butter and mustard in a salad bowl or in your mincer
  • Mix with a whisk or blend to bind the mixture. All done?
  • Then slice the tomato.
  • Now build the clubs (no not dance clubs or a gym; you know what I mean) by following the magic formula – bread – gherkin mix – lettuce – tomato – bread – gherkin mix – ham – bread.
  • Cut along the diagonal to obtain two equal triangles.

To prepare a Well Bred sandwich, you will of course need Brocéliande Well Bred Ham.  But the secret of this recipe also lies in the mixture of mustard, plump gherkins and softened butter (soft butter, at room temperature) which you are going to gaily spread on your slices of white bread. For even greater pleasure, use some slices of tomato and a little lettuce (roquette is a marvellous accompaniment to this recipe). 
This recipe was conceived by Hervé Jamin, the chef at the Manoir des Portes in Lamballe (Department of Côtes d’Armor). Hervé is a master restauranteur who offers inventive and delicate cuisine, with emphasis on the locality. Fresh seasonal products take centre stage.
